The CastelaS mill revisits the traditional practices of the elders of the Baux-de-Provence Valley to create Noir d’Olive.
This olive oil comes from 4 varieties of olives from their orchards, picked at full maturity and stored away from oxygen. Then begins the delicate work of a light fermentation associated with know-how in order to rediscover the taste of candied black olive from the millstones of our ancestors.
We love the generosity and sweetness of Noir d'Olive AOP Vallée des Baux-de-Provence. Typical and with a beautiful aromatic harmony, we find in this olive oil aromas of candied olive, honey, cooked artichoke and mushroom.
It’s a delicious, rounded olive oil.
Noir d'Olive is used cold in salads, to make mayonnaise or aioli and drizzled on fish, mushrooms and puree. potatoes. Very suitable for seasoning summer vegetables: pepper, eggplant, zucchini.
